Natural fruit syrups: see beyond the sundae

blackberry fruit syrup

The Brambleheart: muddle a handful of fresh blackberries in a shaker. Add 50ml gin, 25ml lemon juice, and 15ml Castleton Farm blackberry syrup.

Shake well with ice and strain into a rocks glass filled with crushed ice.

Garnish with a blackberry.



raspberry fruit syrup


The Raspberry Fizz: combine 25ml Castleton Farm raspberry syrup, 15ml lime juice, and a splash of soda water in a champagne flute or highball.

Top with 10ml prosecco and garnish with a fresh raspberry.

The Strawberry Margarita: rim a margarita glass with sugar mixed with a pinch of salt.

In a shaker with ice, combine 50ml tequila, 25ml lime juice, and 15ml Castleton Farm strawberry syrup.

Shake well and strain into the prepared glass.



Beyond the booze

For a refreshing non-alcoholic option, try a Scottish Summer Tea. Steep your favourite black tea for a few minutes. While it’s hot, stir in 15ml of Castleton Farm raspberry syrup and a squeeze of fresh lemon juice. Let it cool slightly, then pour over ice and top with a sprig of mint.
