Natural fruit syrups: see beyond the sundae

The Brambleheart: muddle a handful of fresh blackberries in a shaker. Add 50ml gin, 25ml lemon juice, and 15ml Castleton Farm blackberry syrup.

Shake well with ice and strain into a rocks glass filled with crushed ice.

Garnish with a blackberry.

The Raspberry Fizz: combine 25ml Castleton Farm raspberry syrup, 15ml lime juice, and a splash of soda water in a champagne flute or highball.
